Well, it’s Valentines Day! Happy Valentines day to the people who buy into it!! Every year it comes and EVERY year my husband asks; “Are we doing anything for each other?” And every year my answer is the same, “NO!” And I mean it!! It’s a Hallmark holiday and though I think it’s cute for kids, I’m totally over trying to figure out how to gift my husband or how he will gift me! I call it an “Entitled Holiday”.
The girls did end up with a little something; but nothing big.
As the day wore on, and I took the girls to dance, I started thinking about dinner. Every so often I feel the urge to make a nice dinner; something different. Though more often than not, my ‘new’ recipes are 50/50 in the success department. But I decided that since it was Valentines day, and both girls would be at dance, I would make something special for my guy.
He is a recent vegetarian convert (well Pescatarian to be exact) so I decided to look online and see what options I might have for dinner. I found a pizza looking thing that had grilled veggies on it. As I don’t grill, this would be my first challenge. But what the hey. I’m inspired.
I got to the store and one of the ingredients was basil. Yet at Trader Joes, the only basil they have is in a huge bunch. More than I’ll use in month!……unless I decide to make Pesto……. So I looked up Pesto and realized I only needed Pine nuts and parmesan cheese, so I added it to my dinner.
When I got home, I started with the pesto sauce. Now let me tell you something…..when you have the right tools; cooking is a snap!!
The pesto took all of 5 minutes to make. And it was delicious! After that I chopped all the veggies and prepared the dough. We started up the grill and I took everything out there including the dough and I let it cook. Everything went together really quick. The switch I made was to put the pesto on the dough and then the veggies and a little gourmet cheese.
It was such a nice dinner and I was truly impressed with myself!!! I think the hubby was too. Because he actually ate it AND enjoyed it!
Normally, I bake. But today I would like just a little if I didn’t say I wasn’t inspired by the holiday! Most people went out to dinner or paid a million dollars on balloons or flowers. I can’t see doing that! Especially when the money to buy it comes out of our joint checking account. It just seems silly to me.
But to take a little time and effort to create a nice home cooked meal, to me is a nicer gesture that we both could enjoy. And we did.
Would I have done it if it wasnt Valentines? Perhaps. But I guess we’ll never know!
